I remember having this salad all the time growing up and couldn't resist making it this weekend.
Of course, the husband was a little hesitant in trying something new {even though I'm about 95% sure I have made this for him before}. Especially when the main ingredient was a vegetable.
His reaction?
Well, it's okay for a side salad.
I am still a little confused as to what he expects it to be a side to, since the salad has chicken in it.
Some of us have more mature palates than others.
Hence, I may be finishing off the leftovers by myself.
But don't trust Mike, he doesn't know what he's talking about. This salad is delicious!
Chinese Chicken Salad
The Stuff:
5 cups shredded cabbage
1 package Top Ramen chicken soup, broken into small chunks
1/2 cup green onion
2 chicken breasts, cooked and cubed
1/2 cup oil
1/4 cup sugar
3 Tbsp white vinegar
Season packet from Ramen
The Doing:
Combine cabbage, Ramen, green onion, chicken in large bowl.
Whisk together oil, sugar, vinegar and season packet.
Stir dressing into salad just before serving.
I like mine topped with a little black pepper!
